My Scotch Eggs

    When I feel stressed, I cook....and cook, and cook.
    No one seems to mind, lol 🤣

     

    Yes, I'm stressed today...so Scotch Eggs and casseroles are next.

     

    No, I don't eat everything I cook because I am over 9 years into maintaining over a 100 pound weight loss (without surgery!)

     

    Recipe for my Scotch Eggs

     

    8 Eggs
    2 pounds Sausage meat
    1 egg, beaten
    1 cup crushed pork rinds (optional...you can use bread crumbs or panko if you aren't a low carber)

     

    To hard cook eggs, put in pot of cold water and bring to a boil. Boil for 8 minutes. Drain and run cold water over the eggs. Shell eggs.

     

    Wrap each egg evenly with 1/4 lb sausage meat. Dip in beaten egg and roll in pork rinds if desired. Fry at moderate temperature until brown on all sides.

     

    Drain on paper towels.

     

    Chill in refrigerator. Or eat now, your choice.

     

    Baked version - preheat oven to 400 degrees

     

    Place prepared eggs on a parchment lined baking sheet and cook for 25-30 minutes.

     

    For a nice presentation cut in half and serve on a platter lined with lettuce leaves.

     

    The dipping sauce I make is super easy...just mayo and sriracha mixed together!
