Cheesy Sausage Meat Balls

    These Cheesy Sausage Meat Balls are a huge hit in my house.

    Quick and easy and rarely do we have any left over.

    The kids like to stick toothpicks in them...and use different dipping sauces ♡

    3 pounds bulk Italian sausage (I love to use hot sausage)
    2 cups of crushed pork rinds (if you're not watching your carbs, use seasoned bread crumbs)
    2 cups shredded cheese of your choice (I use a taco blend)
    1 cup grated Parmesan cheese
    2 large eggs
    2 tablespoon minced garlic

     

    Preheat the oven to 350̊F. I use a pan with a wire rack so the grease drips off. Combine all of the ingredients in a large mixing bowl and, using your hands, mix until well incorporated. Don’t “overwork” it as it will toughen up the meat. Form the meat mixture into 1 1/2 to 2-inch meatballs. Place the meatballs on the wire rack. Bake for 25 minutes, or until golden brown.
