I must admit, I much prefer wine... but I truly love making Beer Can Chicken ♡
Don't forget to empty half of the beer out of the can before grilling (it will bubble out if you don't...that's my excuse and I'm sticking to it )
1 whole chicken (3-4 pounds is best)
Extra virgin olive oil
1 half-full can of beer, room temperature
1 tablespoon sea salt (truth be known, it's actually double that . I don't measure much )
Thyme leaves, if you wish...and to your liking
Black pepper (about 2 teaspoons)
Garlic powder (about 2 teaspoons)
Rub the chicken down with the olive oil...but make sure to use some paper towels to make sure your chicken is dry (otherwise, it won't crisp up)
Sprinkle the salt, pepper, thyme, garlic powder all over the chicken.
Lower your chicken over the half full beer can
Note: I sometimes throw a sprig of rosemary in the beer can, to impart flavor.
Set your grill to about 350 degrees.
Check on your chicken every 15-20 minutes or so ..until a meat thermometer inserted into the thickest part of the thigh reads at least 160°F.
It usually takes about an hour or longer, so be patient.
Let Mr. Chicken rest for about 10 minutes before eating ♡
