Baked Cheesy Bacon Zucchini Gratin- Quick and easy!

    Not everything I cook is low carb, but THIS sure is!  No guilt when I eat it :)

    Baked Cheesy Bacon Zucchini Gratin
    Quick and easy!

     

    4 cups sliced raw zucchini (about 3 small to medium zucchini - cut into about 1/8" slices)
    1-2 teaspoons of onion powder
    Salt and pepper to taste
    2 cups shredded cheese (I like to use a taco blend or pepper jack)
    4 Tbsp butter, room temperature
    1-2 teaspoons of garlic powder
    1 cup heavy whipping cream
    1 cup of bacon crumbles (real bacon crumbles can be bought prepackaged)
    1 egg

     

    Preheat oven to 375 degrees. Grease a 9×9 baking dish. I like to use a deep pie dish. You will be doing three layers. Start with a single layer of cut zucchini slices on bottom. Season with salt, pepper, garlic powder, onion powder and then sprinkle with 1/3 of shredded cheese and bacon crumbles. Repeat two more times until you have three layers. Combine butter, heavy cream, and egg. Whisk until smooth. Gently pour the mixture over the zucchini layers.

     

    Bake for about 45 minutes, or until the liquid has thickened and the top is golden brown.
